I’ve always liked coffee flavored muffins. I always have muffins with coffee anyway, so it’s a perfect pairing. The best I’ve had were at the Doughnut Pantry in Lakewood, on Madison shortly before Warren. Here are some other ways to use coffee in muffins:
I made the Mocha Muffin recipe lately, and everyone in the house liked them. The whole wheat flour made them substantial, and the white and dark chocolate chips were a nice touch. The recipe makes about 20 muffins, though, not twelve.
All the other recipes looked good to me as well, and I’d definitely be interested in anyone else’s results with them!
