Fermentation Vats

They let us taste samples from the vats where the sour mash is fermented. The fresh vat (fermentation hadn’t really started) tasted like a fairly sweet wheat / malt porridge. Jonathan even liked it. The well-along vat was like a really good Flemish sour ale. I almost asked if they’d considered starting a line of beer. The yeast strain used is apparently top secret.
